For this year’s Christmas cracker we have this beautiful coffee from Finca Espana, El Salvador. Nora Lemus De Diaz Nuila is a third generation coffee farmer from El Salvador and is the proud owner of several farms throughout El Salvador’s famous Ahuachapán region. Finca España’s 22 hectares straddle the privileged elevation of 1,300 to 1,450 meters above sea level. After the harvest, the cherries are carefully placed in sealed tanks for 168 hours to initiate the anaerobic fermentation. Once complete, the cherries are dispersed on raised beds for 20 days, then moved to clay patios for another 8 days. After the ideal moisture content is reached, the coffee is hulled and rested You can expect to taste rum, red apple, cherry, orange and raisin perfect for bringing you Christmas in a cup.
